If you really fancy apple pies, make this... they taste wonderful! You can make this in the rice cooker or sauce pan. They’re incredibly easy, cheap and it’s likely you’ll have these ingredients anyway. It is gluten free too. You can treat it as a snack, dessert or make something new using this as a stuffing. This is great for making Apple stuffed wheat rolls too.
Apple with nuts and berries recipe
- 1 red apple (I have never used Fuji apples in this)
- 1 green apple (Granny smith, or use another red apple + 2 tsp lime juice
- Sugar 2-4 Tbsp (I use 2 T but if you want it very sweet add 4 T)
- Raisins, Dried Cranberries, Pecans or Walnuts 5 of each.
- 1/2 tsp orange rind (use only orange part because white is bitter, you can grate and freeze them) or use 1/4 tsp cinnamon or cardamom powder or 2 tsp Milk masala or Badam milk powder
- 2 tsp Butter (optional)
Wash the apples thoroughly, peel them and then chop them roughly into cubes or shred them with vegetable slicers such as Mandoline or Benriner.
When the butter has melted, add shredded apples. Throw in some raisins (brown or purple). Few cranberries can be added too for a lovely color. Stir well and cover it with the lid and cook for 5 mins.
Sprinkle sugar and orange rind or cinnamon pd. Mix them well with a wooden spoon.
Keep stirring till the sugar has melted and the mixture becomes quite dry (about 2-3 mins). Switch off the rice cooker and leave the pan in this hot cooker for some more time.
When the sizzling stops transfer this to an eating bowl. Sprinkle pecans or walnuts.
You can eat this hot,warm or cold as a snack or as a dessert. You can store it in the refrigerator for few days.
It is a good filling for Apple pies, Oat crusted apple stuffed French toasts (like in the above picture), Waffle Sandwiches Toasts.
You can make Apple stuffed wheat rolls by stuffing this in Wheat chappatis or tortillas.
To do this first apply orange marmalade on the chappati or tortilla. Place the filling on it and roll them, and then you can fry these rolls on both sides with little butter in your rice cooker or non-stick pan. This tastes similar to the Hot apple pie you get in MacDonald's.
