Homemade granola mix- How to make muesli or granola mix in Indian way?








Here is a quick granola mix recipe for you. Advantage of homemade mix is that you can put in whatever

 nuts and dry fruits you need and make it as sweet as you want. You can alter the flavor by adding vanilla

 once and next time cinnamon or apple spice powder or grated  orange rind. Possibilities are endless.

You can mix milk or yoghurt and eat it as a breakfast or midnight snack.

If you don’t have oven roast the dry ingredients in a thick bottomed nonstick pan or heavy kadai on slow heat. Remove from heat. 
Mix oil, jaggery, cinnamon and honey in a bowl.Pour this over the oven roasted oat and nut mixture  and stir  gently. (You can heat up this liquid mixture before hand so that jaggery melts. This way it easily coats the dry mixture)
Place the pan back on the stove and heat it for another 5 mins on low flame. 
Remove from heat and transfer it onto a big plate. Let it cool.

RECIPE TO MAKE  GRANOLA

INGREDIENTS
·         Quick oats - 2 cups
·         Wheat flakes- 1 cup
·         Corn flakes-1 cup
·         Beaten rice(patla poha), thin variety – 1 cup
·         Almond slices - ¼ cup
·         Dates, deseed and chopped- ¼ cup
·         Flaxseeds - 1 tbsp
·         Sunflower seeds- 2 tbsp
·         Pista and walnuts, chopped- ¼ cup
·         Ground cinnamon - 1 tsp
·         Dark brown sugar (Powdered jaggery)- 6-8 tbsp
·         Coconut oil – 6tbsp (rice bran or sunflower oil is fine too)
·         Honey – 6 tbsp
INSTRUCTIONS
1.    Pre-heat the oven to 180 degrees C.
2.    Mix the first nine ingredients in a big bowl. Transfer the mixture in a baking tray and spread evenly.
3.    Bake for 5 minutes, stir after 2 minutes. Again transfer it into the big bowl.
4.    Mix the last 4 ingredients in another bowl.
5.    Pour this wet ingredients over the baked and cooled dry ingredients and mix well.
6.    Transfer the mixture into a greased baking tray and spread evenly.
7.    Bake for 20-25 minutes until granola is slightly browned.
8.    Remove from oven and let cool.
9.    Store in an airtight container for up to a few weeks.
10.  You store this in the refrigerator in small boxes and keep one outside. This way you can keep this for more months.
